Lemon Chicken Orzo Soup
2 tbsp olive oil
1 bunch green onions, diced
3-4 celery stalks, sliced
2 large carrots peeled and sliced
2 tsp minced garlic
1 tsp fresh thyme
20 oz. cooked and shredded chicken breasts
Zest of 2 lemons
6 1/2 cups chicken broth
Salt and freshly ground pepper to taste
3/4 cup orzo
3 cups baby spinach
Juice of 1 lemon
1/4 cup fresh dill
Rosemary sprigs to taste
Lemon slices for garnish

Heat oil in a pot. Add green onions, celery, and carrots, cook 7 minutes. Add garlic, thyme, lemon zest, salt and pepper. Add your chicken broth, bring to a boil and add orzo. Cook for 10 minutes Stir in chicken, spinach and dill. Simmer until spinach is wilted. Mix in the juice of one lemon. Top with lemon slices and rosemary. Simmer for another 5 min and enjoy!
