Lemon Chicken
Ingredients
- 1/4 cup olive oil
- 3 tablespoons minced garlic
- 1/3 cup dry white wine
- 1 tablespoon grated lemon zest (2 lemons)
- 2 tablespoons lemon juice
- 1 1/2 teaspoons dried oregano
- 1 teaspoon thyme
- Kosher salt and pepper to taste
- 4 boneless chicken breasts, skin on
- 1 lemon
Notes
Preheat the oven to 400 degrees. Heat up olive oil and garlic in a small pan and cook for just 1 minute.. Add white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and transfer sauce to a baking dish or 9x13 pan. Place the chicken in the pan skin side up, drizzle with olive oil and sprinkle with salt and pepper. Cut up the lemon in 8 pieces and place them throughout the pan. Bake for 35 to 40 minutes, you’ll know the chicken is done when the skin is slightly browned. For extra crispiness you can broil for 2 minutes. Cover the pan and let cool for 10 minutes. Enjoy!
